Roasted Maui Onions with Honey Mustard

This wonderfully easy side dish smells incredible as it roasts and delivers a flavor that works with just about any meal—especially roast turkey or beef. While Maui onions give it a special Hawai‘i touch, feel free to use whatever sweet onions you can find where you live.

Ingredients:

  • 1/4 cup currants
  • 3 Tablespoons red wine vinegar
  • 3 large Maui onions
  • 4 Tablespoons butter
  • 2 Tablespoons Dijon mustard
  • 2 Tablespoons Big Island Bees Wilelaiki Honey
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp ground cloves
  • 1/2 tsp thyme leaves
  • Fresh ground black pepper to taste

Directions

  1. Preheat oven to 350° F
  2. Soak the currants in the vinegar for 10 minutes.
  3. Cut each onion in six slices lengthwise. Place the onions in a shallow roasting pan.
  4. Melt the butter in a small saucepan. Stir in the currants, vinegar and all the other ingredients. Pour this mixture over the onion slices in the roasting pan, stirring just enough to ensure the slices are well coasted on all sides.
  5. Bake until the onions are soft and browned between 30 and 45 minutes. Serve warm.
