Late Harvest Macadamia Nut Honey
When Lehua blooms before Macnut season has ended, the bees will sometimes forage on both blooms before our last harvest of Macadamia Nut Blossom honey. This produces a crystalized honey with a subtle flavor of Lehua honey mixed in with the usual rich and floral Macnut honey.
You may reliquify the honey by gently heating the honey in a smaller jar in a bath of hot (not boiling) water. Do not place the honey on direct heat to avoid pasteurization. Stir to emulsify as the honey crystals dissolve.
