Quinoa, Pomegranate and Pea Shoot Salad
This refreshing salad is a hybrid between a green salad and a grain salad (though quinoa isn't technically a grain). Pea shoots, like all sprouts are particularly high nutrition greens and have a nutty flavor that pairs well with quinoa. The perfect summer salad to bring to a potluck or BBQ.
Ingredients:
- 2 cups cooked quinoa
- 1 1/2 cups mint leaves, chopped
- 1 1/2 cups flat leaf parsley leaves, chopped
- 3 cups pea shoot leaves
- 1 cucumber, deseeded and chopped small
- seeds from 1 pomegranate
- 1/2 cup almonds, roughly chopped
- 1/3 cup crumbled feta cheese
For the Dressing:
- juice from 1 lemon
- 1/4 cup olive oil
- 4 tsp Wilelaiki honey
- 1/2 tsp salt
- zest from 1 small orange
Directions:

Mix together all the salad ingredients in a large bowl.

Stir together the lemon juice, olive oil, honey, salt, and orange zest until the honey is completely dissolved.

Toss the salad in the dressing and serve immediately.
