Quinoa, Pomegranate and Pea Shoot Salad with Citrus-Honey Dressing

Quinoa, Pomegranate and Pea Shoot Salad

This refreshing salad is a hybrid between a green salad and a grain salad (though quinoa isn't technically a grain). Pea shoots, like all sprouts are particularly high nutrition greens and have a nutty flavor that pairs well with quinoa. The perfect summer salad to bring to a potluck or BBQ.

Ingredients:

  • 2 cups cooked quinoa
  • 1 1/2 cups mint leaves, chopped
  • 1 1/2 cups flat leaf parsley leaves, chopped
  • 3 cups pea shoot leaves
  • 1 cucumber, deseeded and chopped small
  • seeds from 1 pomegranate
  • 1/2 cup almonds, roughly chopped
  • 1/3 cup crumbled feta cheese

     For the Dressing:

    • juice from 1 lemon
    • 1/4 cup olive oil
    • 4 tsp Wilelaiki honey
    • 1/2 tsp salt
    • zest from 1 small orange

    Directions:

    1. Mix together all the salad ingredients in a large bowl.

    2. Stir together the lemon juice, olive oil, honey, salt, and orange zest until the honey is completely dissolved.

    3. Toss the salad in the dressing and serve immediately.
